• Spinach Mushrooms Omelette

    button mushrooms

    parsley chopped

    chives chopped

    basil leaves chopped

    spinach chopped

    blue cheese crumbled into small pieces

    old cheese

    butter

    pepper

    Preparation

     1. Saute mushrooms in a frying pan in butter over medium heat until soft (about 5 min)

     2. Put eggs in a bowl, beat lightly and sprinke with pepper.

     3. Add half the spinach to the mushrooms, cover and cook on low for about 5 minutes.

     4. Add to the pan in order half the herbs, eggs, blue cheese, half the old cheese, rest of spinach, rest of herbs.

     5. Cover and cook on medium heat for 3 minutes.

     6. Fold in half and add the remaining old cheese on top

     7. Add 4 tbsp water to the pan (not on the eggs) to steam the eggs and help melt the cheese

     8. Cover and cook for 3 minutes.
