Ingredients

whole wheat flour
oatmeal flour (grind oatmeal flakes with coffee grinder until they resemble flour)
baking powder
yogurt
sesame oil
unsalted butter
sesame seeds
ground flax seeds (grind using a coffee grinder)
sunflower seeds (1 of the tbsp is ground)
cold water
Preparation
1. Stir together first 3 ingredients.
2. Add the yogurt and sesame oil to the dry ingredients and mix with a pastry blender until the mixture is granular. The consistency should be similar to making pastry (the yogurt and oil mixed with the flour look like small peas).
3. Melt the butter in a pan and lightly toast the seeds (about 5 minutes on medium heat)
4. Add the seeds and melted butter to the flour and mix.
5. Make a well in the middle of the mixture and pour the cold water into the well (add an extra tablespoon if needed). Stir with a fork until the mixture comes together
6. Sprinkle oatmeal flour on the counter and place dough on the oatmeal then knead it on the counter just until you have a ball of dough.
7. Roll the dough out to 1/8-inch thick. Cut crackers with a cookie cutter. Place the crackers on an ungreased cookie sheet.
8. Bake for 19 to 23 minutes or until the crackers are baked and dry. Let sit on the cookie sheet for five minutes and then remove them to a wire rack.
Makes about 36 crackers.
