• Avocado and Shrimp on Endive

    Belgian endives

    medium shrimp

    vegetable oil

    unsalted butter

    pepper

    lemon zest

    lemon juice

    lime

    green onions

    avocados

    yellow or red pepper finely sliced

    black sesame seeds

    Preparation

    1.  Clean, shell and devein 20 medium shrimp.

     2. Toss shrimp with lemon zest and a sprinkle of pepper.

     3. Melt butter in a frying pan with oil and lemon juice

     4. Cook shrimp in the frying pan about 2 – 3 minutes on each side or until cooked through and set aside to cool.

     5. Cut avocado into chunks and mix together with juice of 1 lime, 2 finely chopped green onions (green part only).

     6. Separate endive leaves, spoon avocado mixture onto each leaf and top with shrimp and yellow pepper strips.

     7. Garnish with black sesame seeds.
