• Potato bake

    medium potatoes (with skin on)

    sweet potato (with skin on)

    broccoli

    allspice

    Pepper to taste

    butter

    milk

    garlic powder

    ow fat Swiss cheese cut into 2 inch cubes

    blue cheese crumbled

    grated parmesan cheese

    Preparation

     1. steam broccoli until almost done but still a bit crisp

     2. slice potatoes and cook in boiling water until tender (about 20 minutes)

     3. drain and lightly mash potatoes to break them up a bit

     4. add allspice, pepper, butter, garlic powder, milk and mash until combined

     5. add Swiss and blue cheeses and stir evenly distribute it in the potatoes

     6. gently mix in broccoli

     7. place potato mixture in a casserole dish

     8. sprinkle with parmesan cheese

     9. cover and bake at 350 F for 20 minutes

     10. remove cover and broil on low for 5 minutes or until top is browned
