Spinach filling:

boneless chicken breasts
Satori balsamic bellavitano cheese (or any other favorite cheese)
maple flavored mustard (or other favorite mustard)
slices large sweet onion chopped
garlic chopped
fresh spinach
live oil
balsamic vinegar
nutmeg
Preparation
1. For spinach filling, sauté onion and garlic in olive oil for about 5 minutes
2. add spinach, vinegar and nutmeg and toss until spinach is wilted and set aside
3. cut a slit in the chicken breasts big enough to allow spinach stuffing inside
4. put cheese in the slit in the chicken breast
5. place spinach mixture on either side of the cheese in the chicken
6. tie chicken breast with butchers twine to keep the stuffing inside
7. spread mustard on outside of chicken
8. place in a covered baking dish
9. bake at 375 for 30 minutes
10. remove cover and increase heat to 385 and bake for an additional 15 minutes
