Preparation
1. Place almonds in food processor and pulse until finely chopped
2. Add dates, cherries, maple syrup, honey, orange zest to food processor and pulse until combined (it should be
slightly sticky and stay together when formed into 2 cm ball)
3. Line a cookie tray with parchment paper
4. Using a tea spoon with slightly wet hands scoop out mixture and form into about 2 cm ball (squishing mixture
to make solid ball)
5. You should end up with 20 – 24 balls
6. Using a double boiler or a pot with a bowl that fits on top add water to pot (but not touching top of double
boiler or bowl)
7. Bring to a simmer and place pot/bowl on top
8. Break baking chocolate into pieces and add to pot/bowl
9. When baking chocolate starts to melt add cholocate chips
10. Stir to combine
11. When it is melted add balls about 4 at at a time and with a spoon roll them until they are covered in chocolate
12. Using a spoon and fork place chocolate covered balls back onto backing sheet
13. Let cool for about and hour
