• Black bean veggie burgers

     

    Ingredients

    cooked black beans

    rolled oats

    cooked brown rice

    nutritional yeast

    medium onion, chopped

    paprika

    grainy mustard

    soy sauce

    parsley

    bread crumbs

    Preparation

     1. in a medium bowl combine beans, oats, rice and nutritional yeast and mix thoroughly

     2. in a blender combine onion, parsley, paprika, mustard and soy sauce and blend until mixed

     3. add the onion mixture to the bean mixture and mix well

     4. mixing with your hands add enough of the bread crumbs so the mixture is firm to touch and not sticky

     5. add Swiss and blue cheeses and stir evenly distribute it in the potatoes

     6. form the mixture in 3/4 inch (2 cm) thick patties

     7. heat olive oil in a frying pan over medium heat

     8. fry patties until lightly browned, about 1 minute per side.

     

    Uncooked patties can also be frozen

    Makes about 8 - 10 patties
