• Cherry Almond Bars

     

    Ingredients

    Fruit Filling:

    3 cups

    1/2 cup

    Crust and Topping:

    1 1/4 cups

    1 cup

    3/4 cup

    cherries, pitted and halved

    granulated sugar

    cornstarch

    zest and juice of 1/2 lemon

     

     

    unbleached all purpose flour

    whole wheat flour

    slivered almonds

    brown sugar

    salt

    unsalted butter, cold and cubed

    egg

    almond extract

    Preparation

    Filling:

    1. Combine all filling ingredients in a saucepan over medium-high heat

    2. Bring to a boil, stirring occasionally and boil for 1 minute to thicken and then remove from heat.

     

    Crust:

    1. Put flours, brown sugar, almonds and salt in a food processor and pulse once or twice to combine.

    2. Add butter and process until crumbly.

    3. Add egg and almond extract and pulse until mixture just comes together.

     

    4. Line 8 inch square baking pan with parchment paper

    5. Press 2/3 of the crumb mixture into the bottom of the pan.

    6. Pour in cherry filling

    7. Place clumps of the remaining crumb mixture over the cherry filling

    8. Bake in 350 F oven for 30 minutes, or until light golden brown.

    9. Cool for 1 hour before cutting
