• Zucchini Fries




    1/4 cup

    1 tsp

    3/4 cup

    1 tbsp

    2 tbsp

    1/2 cup



    zucchini cut into wedges

    all purpose flour

    dried thyme

    crushed whole wheat crackers

    each dried parsley, dried oregano

    grated parmesan cheese

    egg whites




    1. Put flour and thyme in a plastic bag, add zucchini and shake to coat

     2. Put egg whites in a shallow bowl

     3. Shake off excess flour from zucchini and dip them in the egg whites

     4. Place remaining ingredients in a shallow bowl

     5. Dredge zucchini in cracker mixture and press to adhere

     6. Bake on parchment lined baking sheet and bake in 450F oven 10 minutes

     7. Turn zucchini over and bake for another 10 - 15 minutes (until golden)
